Recipe: Crockpot Chicken Tortilla Soup

This is one of the family favorites. Easy to make and I love crockpot meals because I can make it in the morning and when we are ready to have it, it is ready. Especially on busy afternoons.


This recipe has been adapted over the years, especially living here in Australia. Included with this recipe is my recipe for Taco Seasoning and Enchilada Sauce (which the taco seasoning is used to make the enchilada sauce).


*In this recipe I use the measurements of ground chili as I would in the US. However, because there is a difference in Australia, use 1/4 teaspoon ground chili instead of the 1 tablespoon if you are making this in Australia. Cilantro is coriander in Australia.*


You can also make this as a vegetarian dish by omitting the chicken and substituting the chicken broth for vegetable stock.


This recipe also makes the soup mild in spice. If you like it spicier, add more ground chili or Tabasco/hot sauce to desired taste.




Chicken Tortilla Soup in Crockpot

with Taco Seasoning & Enchilada Sauce Recipe


Prep Time: 30 minutes | Cook: 6-8 hours | Cool: none

Ingredients:

1 pound shredded, cooked chicken

2-3 green chili peppers, diced

1 (15 oz) can diced tomatoes

2 cup enchilada sauce (see recipe)

4 cups chicken broth

1 tbsp of remaining taco seasoning

2 cups frozen corn, add more if desired

1 tbsp chopped cilantro

Directions:

  1. Cook and shred chicken. (I boil the chicken, it will absorb the favors of the soup while it cooks in the crockpot)

  2. Place chicken, tomatoes, enchilada sauce, onion, and green chilies into slow cooker.

  3. Pour in chicken broth and season with the remaining taco seasoning from the enchilada sauce.

  4. Stir in corn and cilantro.

  5. Cover, and cook on LOW setting for 6-8 hours or on HIGH setting for 3 to 4 hours.

  6. Top with cheese, tortilla chips, sour cream, and hot sauce if desired.


Serves 6-8

Taco Seasoning Recipe


This seasoning can be used for all your favorite Mexican dishes and with various meats. Recipe makes about 2 tablespoons of seasoning.


Prep Time: 2 minutes | Cook: none | Cool: none

Ingredients:

¼ tsp garlic powder

¼ tsp red pepper flakes

1 tsp black pepper

1 tsp salt

1 tbsp chili powder **

1 ½ tsp cumin

½ tsp paprika


Directions:

  1. Mix together all ingredients.


**If making in Australia, use 1/4 tsp ground chili pepper. This will make the seasoning mild**


Enchilada Sauce Recipe


We use enchilada sauce for various dishes, especially the tortilla soup. But we also use it as a topping for other Mexican dishes. Makes about 2 cups (15 oz) of sauce.

Prep Time: 2-3 minutes | Cook: 10 minutes | Cool: none

Ingredients:

¼ cup vegetable oil

2 tbsp flour

1 tbsp taco seasoning (see recipe for Taco Seasoning)

1 cup (8oz) tomato sauce

½ cup water

Directions:

  1. Heat oil in a small sauce pan over medium heat.

  2. Add flour and taco seasoning. Heat until bubbly and paprika can be smelled.

  3. Add tomato sauce and water. Whisk together, reduce heat, and cook for 10 minutes covered.
